Help with shading/shadows

I have a question about shadows and shading, what is the best way to apply them to a drawing? I am aware of the layer styles and such, but they are pretty generic and don't offer as much control. I want to add shading something like this:

See how the shadows are on the side of her face, top of the neck, and around the arm? Also how the hair is two colors?

Or this one: Click here (big picture)

Where the horse had shading around the legs and tail and such.

I guess a cell shaded toon effect is what I mean.

I tried doing shapes without stroked but was having issues with that, is this the best way or is there a better way?

For the image of the girl, I would use masking. Once an image moves, I believe shading is easier to control with masks. It's just my opinion, though -- there are lots of ways.
You can't have everything. Where would you put it?
