With firefox and some add-on you can download youtube videos. With some other software you can extract the sound out of it.
I have a box of 15 LPs with gregorian chorals. I could sell them ...

You can download a mp3 directly from any youtube video using this page. Very recommended.

My problem is the copyright.
I guess I can't simply download the video, rip the audio track and use it on my works...

Other forum members will correct me if I'm wrong, I'm sure, but I think copyright is only a problem if you are seeking to make money from your work. If you are a hobbyist, I don't *think* there is a problem...

Make money?

I'm not so lucky!
My intention is to make a video and upload it on YouTube, Vimeo and similar services... If it will make me earn some money, I will be happy!
I've seen many videos on Youtube without the audio, deleted due to Copyright... I will avoid that circumstance...

Not sure this will help, but you can try looking for copyright free recordings at the Internet Archive:

You could also try the hard way.
You're on Sardinia?
Well, then you must be catholic.
Visit a few times eagerly the church next to your homeplace.
Have a little talk to the priest, and then, some day simply tell him about your hobby, or your work, to create animated films.
Then just tell him about your idea of using gregorian chants in a film clip on youtube, and if you could record some songs for using it, with permission and of course some credits in the film clip, sorry, no money, but fame!
The problem would be especially, if your clip is to funny to be religious.
Yes, that's one of my created CD Cover
