When I use the add point tool it adds two points for some reason. And if I delete one point it often deletes the other. Did I accidentally turn on some weird feature and if so, how do I stop that?

It always adds one point when you press the mouse button and one when you release the mouse button. AS does not allow points without an attached curve, so deleting one point on a two-point curve will delete both points.

Thanks, but it does this when I add points to anything. It can be something with multiple points, and still creates two, and deletes both or the whole line if I try to delete the extra.
