The only flaw with Anime Studio is that it has now decent file management structure within the software, that said it's not hard to assign a production body to look after the file management area of things, which is what we do.
Our file structure and labeling system is the same on every system, all drives have been named the same so there is no problem with missing elements when another animator is working with the same file on another machine.
We have a management software being being designed for us that will help workflow even more, it's the best option for us as we have a completely digital workflow and have certain needs that other management softwares don't supply.

It really depends on the project, at present we're producing a pilot for Fox, there are 2 Directors, 3 animators, an Art Director/Background Artist, Character Designer/Builder, 2 model builders, 2 compositors, A Sound FX crew and a composer.
So for a 10 minute pilot (that we have developed the look of also) we have 14 people working on it - but only 3 animators and 2 model builders is the answer to your question.
