How do I get the same shading effect as...

...the default AS8 character Dexter or any of the other characters?

They all have shadows on every part of their bodies but I don't see shadows selected in their layer properties anywhere or masked shadows anywhere in the tree.

That shadows are applied on each shape as effect. Check on the style window.
