I see there's a parent bone option, but where's the unparent bone option?
Also, is there some sort of visual hierarchy in a list view that I can view that shows what is parented to what?

With the parent bone tool, and a bone selected, clicking at a place with no bones will unparent the selected bone.

The Parent tool is multipurpose but using it is pretty straightforward:
If a bone is selected, when you create another bone, it's automatically parented to the first bone.
To edit the hierarchy, you use the Parent Bone too.
When the Parent Bone tool is selected, the hierarchy is visualized using arrows depicting the relationship between the bones. The arrows always point from the child to the parent.
To change a child's connection to another bone, alt-right click the child bone to select it and then left click on the desired parent bone to connect it.
If you left click in an empty space, the selected child is unparented from its parent bone.
If you alt-right click in an empty space, all selected bones become unselected.
If multiple bones are selected they can be parented to an unselected bone with a single left click.
If NO bones are selected or ALL bones are selected, the tool does not work (since it's unclear what you want to parent.)
If you practice the above, it quickly becomes second nature. If you forget something, look at the shortcut tip that appear under the options bar.
Special tip: If you ctrl-left click a bone, the clicked bone will become a target bone and the selected bone will target that bone. This is a fast alternative to using the Bone Constraints panel to setup and animate bone targeting.
