Is there a way to assign key shortcuts to installed scripts? If there's a way, I would appreciate your sharing it. Thanks.

Only if you install it as a tool/button in the toolbar.

But most scripts are installed as a tool button on the toolbar. So how can I add a keyboard shortcut?

Edit>Edit Keyboard Shorcuts, then search for your script
